Our breads are lovingly made at our sister company; Crust & Co. in Wilston. They are all made using traditional slow fermentation processes and only the purest of ingredients and a sourdough culture. Our authentic handmade approach creates a bread which is full of flavour and has a great texture and crust.

    Crumble coated cocoa éclair filled with a chocolate crème pâtissière, finished with a house made chocolate fondant
    3b - Coffee eclair
    Crumble coated éclair filled with a coffee infused crème pâtissière, finished with a house made coffee fondant.

    - Individual croquembouche with crème pâtissière filled choux. Please ask for our current flavours.  
  5. Millefeuille
    - Caramelised puff pastry with a light vanilla crème.
  6. Taste aux Fraises 
    - The classic fresh strawberry tart, made with a sweet biscuit base, almond cream, a layer of strawberry compote, vanilla crème pâtissiere and fresh strawberries.
  7. Tarte au Citron Meringue 
    - Tangy lemon tart finished with a velvety Italian meringue. 
  8. Dôme au Citron 
    - Almond sablé base with a tangy and zesty lemon mousse dome. (gluten free)

    - Mini versions of éclairs and a selection of our tarts and pâtisserie range.

    - Rum and vanilla perfumed pâtisserie which is caramelised on the outside and pudding like on the inside.

  1. Dulcey Tarte
    This tart has pâte sucrée base with a Dulcey biscuit, a caramel layer & finished with a Dulcey mousse. (Valhrona Dulcey is a high quality blonde chocolate with a creamy & toasty flavour range)
  2. Ruby Désir 
    - Honey and raspberry madeleine base with a  raspberry confit centre surrounded by a raspberry mousse.  
  3. Macaron Exotique 
    - coconut macaron layered with a mango mousse and a centre of confit mango and pineapple. Available as: Individual portion, 18cm and 24cm.
  4. Shades of Chocolat 
    - crunchy praline and feuilletine base, with three layers of chocolate mousse; dark, milk and white. Finished with a mirror glaze, chocolate decorations and gold leaf. Available as: individual portion, 4, 6 & 8 person portions.
  5. Le Bonheur 
    - a crunchy chocolate base, Kalingo chocolate ganache and a dark chocolate mousse, finished off with a red velvet chocolate. (A low lactose product.) 
    Available as: Individual portion, 4 persons and 6 person portions. Larger sizes are also available.

A traditional French pâtisserie, a pièce montée, which is often served at weddings, christenings and many other celebrations. It is a cone shape of profiteroles (choux pastry filled with crème pâtissière) bound with toffee, and decorated with nougatine (slivered almonds and caramel). 

Ordering your croquembouche
We recommend a serve is 3 or 4 choux per person:  $3.50 per choux
Crème Pâtissière flavours:  (Two flavours maximum)
Vanilla • Grand Marnier • Kirsh • Chocolate • Cappuccino • Rum
Sizes: 
• 50 Choux - approximately 35cm high
• 80 Choux - approximately 50cm high
• 120 Choux - approximately 65cm high
Any additional choux in between these sizes or in addition will include the same flavour filling as per those on the croquembouche and provided in boxes. 

Decorations:  
Standard decorations are a nougatine base and some hail sugar. These are all appropriately presented according to the size of the croquembouche.
Should you wish to have a more detailed decoration, such as roses and leaves (additional $5 for one rose and two leaves) or a personalised theme or shape, this may be arranged at an extra cost by discussing your requirements with our staff. All barrel shaped croquembouche will incur an additional cost of $30.
While we will make every effort to meet your requests, please be aware that each pièce montée is different and therefore variations will occur.

Storage of your Croquembouche: 
A croquembouche needs to be kept in a cool, air conditioned space. It can not be put in a fridge or coldroom as the toffee which holds it together will take in the humidity and may melt. Due to the hot and humid weather, please follow these instructions, as once the croquembouche has left Chouquette we can not guarantee its condition.  

Collection: 
Please ensure that you are two people to collect - a driver and one to hold the croquembouche on their lap. When you collect your croquembouche we will give instructions on how to get it safely to your destination.  

We are unable to offer delivery of Croquembouche. As a result, please ensure that you arrange to have a vehicle that has enough space for the
croquembouche to sit on the passenger's lap.
